Homemade Hummus

“Yummiest” Artichoke Dip
Ingredients
16oz can (not marinated) artichokes
1 small can diced green chilies
1 cup nonfat mayonnaise
1 cup freshly grated Parmesan cheese (not from the can)
Directions
Drain and cut artichokes. Stir in all ingredients.
Bake at 325 degrees for 25-30 minutes, or microwave until hot. Serve with Fritos “Scoops” or other corn chips desired.
A “cornier” and more satisfying salsa
Instead of the same old spicy tomato salsa out of a jar, this fresh corn salsa recipe turns the old standby on its head. Just check out this surprising combination of ingredients!
Ingredients
2 cups corn kernels (cooked and cut off the cob, thawed, or canned)
8 oz sliced black olives
1 small sweet red pepper, seeded and chopped
1 small onion, chopped
3 to 5 garlic cloves, minced
1/3 cup of olive oil
¼ cup of fresh lemon juice
3 tablespoons cider or white wine vinegar
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon pepper
2 medium, ripe avocados, cubed
Tortilla chips
Directions
Step 1: Combine corn, olives, red pepper, and onion in a small bowl.
Step 2: Combine garlic, olive oil, lemon juice, vinegar, oregano, salt and pepper and mix well.
Step 3: Pour mixture from Step 2 over mixture from Step 1; toss to coat well throughout.
Step 4: Cover tightly and refrigerate overnight.
Step 5: Peel and chop avocados. Combine gently don’t overstir.
Step 6: Now get your tortilla chips and go at it!

Ingredients
2 squares baking chocolate
1 cup cream
1 cup sugar
¼ cup flour
¼ teaspoon salt
Directions
Melt chocolate in a quart saucepan on low temp. Stir in cream.
Stir together (in a separate bowl) sugar, flour, and salt.
Gradually whisk contents of bowl into cream and chocolate. Slowly bring to a boil while stirring. Good hot or cold.
